Cod Fish Recipes

Cod Fish Recipes are becoming increasingly popular, mainly due to its mild flavor, low fat content and its dense, flaky white flesh. Norway exports large amounts of salt cod fish throughout Europe.





The mild not too fishy flavor of this fish makes it favorite in all kinds of recipes. When you hear English "fish and chips" mentioned, you can almost be certain that the fish that they are referring to is cod.

A Cod fish recipe that is a favorite on Friday nights "fish and fries" across the United States and is particular popular along the Eastern seaboard where purchasing fresh caught Cod fish is relatively easy.

Cod can be cooked in a number of ways. Here are just a few of the ways you can prepare and add to your favorite family recipes.

Broiled Cod

Broiled cod is extremely simple to make and very handy for those on the run as it can be made in just a few minutes. This is just on of a number of simple cod fish recipes.

Ingredients

2 cod fillets, melted butter, dash of seasoning salt, dash of dill weed, dash of paprika.

How To

Place fillets on your boiler tray

Brush with melted butter.

Add seasoning salt, dill weed, and paprika to taste.

Broil until the cod flakes easily with a fork and top is a very light golden brown.

A variation of broiled cod that is equally good is to replace the seasoning salt, dill weed, and paprika with a splash of lemon juice, salt and pepper to taste or purchase a sprinkle container of lemon pepper seasoning to use.

Serves 4

Baked Cod with Hollandaise sauce

Ingredients

1 package of Hollandaise sauce, 2 cod fillets, melted butter, Cooked white rice.

How to

Preheat oven to 350 degrees Fahrenheit

place cod fillets in baking dish and lightly brush with butter

Bake approximately ½ hour or until cod is flaky.

While cod is cooking prepare rice and Hollandaise sauce following package directions.

Lay cod on rice and spoon Hollandaise sauce over cooked fish.

Garnish with a sprig of parsley or sprinkle on dried chives.

Serve immediately.

Makes four servings.

Quick Cod Chowder

For those who love soup on those cold winter nights, there is nothing like a big hot bowl of Cod chowder to warm you inside and out.

Ingredients

2 Tablespoons butter, 2 cups finely chopped onions, 2 stalks finely chopped celery, 4 medium potatoes diced, 2 pounds of cod cut into 1 inch chunks, 4 cups chicken broth, 1 cup clam juice, 24 oz. (2 cans) of evaporated milk, 1/2 cup all purpose white flour, pepper, 1/2 teaspoon Basil, 1 teaspoon rosemary.

How To

Melt butter in a large saucepan. Add onions and celery and sauté until tender.

Pour in the chicken broth and add the potatoes. Simmer for 10 to 15 minutes.

Add fish and simmer for an additional ten minutes.

Add salt, pepper, basil and rosemary and bring to a slow boil

Mix the flour with the clam juice, stirring until smooth and add to soup stirring until it thickens

Remove from heat, stir in evaporated milk and serve immediately.

Cod Fish Cakes

A favorite along the fishing towns of the east coast, Cod fish cakes are easy to make and taste delicious.

Ingredients

1 pound of cod fillet, 2 medium potatoes, 1 cup of bread crumbs, 2 cloves of garlic finely chopped, 1 small onion finely diced, 1/4 cup chives, 2 beaten eggs and canola oil.

How To

Boil and mash potatoes and set aside.

Boil cod until it flakes easily, then drain and flake with a fork making sure to remove any bones.

Add the rest of the ingredients and mix by hand.

If the ingredients are two dry add an additional egg, if mixture is too sticky, add a few more bread crumbs.

Form mixture into cakes and fry on high heat in skillet coated with canola oil.

Make approximately 4 to 6 servings.

Beer Battered Cod

Beer battered cod is simply one of my families favorite of the cod fish recipes.

Ingredients

2 quarts vegetable oil, 1 cup flour, 2 Tablespoons garlic powder, 1Tablespoon onion powder, 2 teaspoons pepper, 1 unbeaten egg, 1-12 oz can of beer, 2 cod fillets cut in half.

How To

Heat oil in deep fryer to 365 degrees F.

Rinse fish and pat dry

Combine all the dry ingredients in large mixing bowl. Add egg and stir in. Add beer and stir until thin batter forms.

Dip fish in batter and gently place in oil turn if necessary. Cook until batter golden brown and slightly crisp.

Drain on paper towel. Serve with fries for fish and chips.
